One reason I’m so interested in those knives is that they use 10Cr15MoVCo steel (10Cr15CoMoV to be more correct). Which is Chinese variant of a Japanese VG-10, which in itself a very good steel.
A 15cm Shun Classic utility knife with VG-10 steel costs aroung 130GBP. A 14cm IKEA Fjallroding utility knife costs 30GBP.
